Job description
We are looking for a Sous Chef to join our team. Tattenhall Marina Boathouse Cafe offers all day dining to moorers, locals and holiday guests. We are looking for an individual who can manage and coordinate the day-to-day operation of the kitchen, providing the highest and most consistent standards of food preparation and delivery.
Main Duties and Responsibilities
- Responsible for assisting the Head Chef with the daily operation of the kitchen.
- Monitor the day-to-day requirements and upcoming events to order ingredients and products correctly, maintaining an adequate level of stock. Accurately record the receipt of goods delivered and immediately report any short or incorrect delivery.
- Oversee members of the café team who provide kitchen support.
- Communicate effectively and manage the delivery of the required standards and timings, ensuring the café team delivers exemplary food and service consistently.
- Encourage an atmosphere of respect and co-working amongst colleagues.
- Lead, motivate and inspire the café team, driving them to exceed customer expectations.
- Work alongside the Marina Manager to coordinate staff training and development, ensuring the café team are trained and aware of their roles and responsibilities and are equipped to carry out their tasks effectively and to a high standard.
- Be proficient in the understanding of the law regarding allergens, ensuring that every dish is accurately assessed with the allergens recorded for the café team.
- Review menus, considering the requirements of our customers and ensuring that the required GP is met.
- Work with appointed suppliers to source high quality ingredients at the best possible price.
- Take pride in the presentation and quality of food from your kitchen, ensuring the customer always receives an exceptional standard of food.
- Complete wastage and staff food logs to accurately record GPs.
- Be passionate about great food, keep up to date with trends in the food industry and optimise kitchen processes.
- Demonstrate a high level of food safety knowledge and follow recommended practices.
- Undertake regular audits of all areas within the kitchen and storage areas to ensure complete adherence to agreed policies and EHO regulations.
- Ensure that all daily, weekly and monthly paperwork is completed in the Safer Food Better Business records.
- Ensure that all equipment is working safely and compliant with manufacturers' guidelines for operation.
- To maintain the cleanliness and care of the equipment and working areas used in accordance with the standards required by Law and Company procedure.
- To comply with the relevant duties and responsibilities under the Health and Safety at Work etc. Act 1974, the Management of Health and Safety at Work Regulations 1999 (as amended) and all relevant Codes of Safe Working Practice, policies and other health and safety information relevant to the area of work.
Qualifications and Experience
- Food Hygiene Certificate Level 2 minimum
- Excellent understanding of food hygiene regulations
- A minimum of 3 years' experience as a chef in a fast paced, high volume environment
- Proven experience in managing a kitchen
- Be fluent in spoken and written English

Job Types: Part-time, Permanent, Freelance
Part-time hours: 18-36 per week
Salary: £10.00-£13.00 per hour

You'll manage and coordinate the day-to-day operation of the Woodlands Cafe kitchen, providing the highest and most consistent standards of food preparation and delivery. Menu changes will be finalised with our Executive Chef and Hospitality Director but your ideas on dishes and promotions are always encouraged and supported. The Boathouse Cafe Bar is set on the beautiful marina front at Roydon Marina Village, we have a 40-cover cafe with additional seating outside in the beer garden for the warmer months. We have a small but friendly kitchen and front of house team. We’re looking for an enthusiastic Café/Bar Assistant who can also cover shifts in the kitchen, to join our friendly team.
Hours of work will include Friday, Saturday and Sunday.
